
Stop Waiting on Your Steam Oven
If you’ve ever worked in a busy kitchen, you know the frustration of staring at a steam oven, waiting for it to actually get hot. It’s a total bottleneck. Most ovens rely on slow-ramp heating or convection, which basically means you’re wasting time and power just to get the air moving. We decided to stop waiting. Instead, we use shortwave infrared lamps. They hit your target temperature in seconds, not minutes.
How it actually works
We use quartz-halogen tech to get that near-instant heat. Think of it this way: convection tries to heat the air around the food. That takes forever. These radiant heaters send electromagnetic energy straight into the food. It’s fast. Really fast. The best part? When you swing the door open and all that heat escapes, the oven doesn’t panic. It bounces back to your set temperature almost immediately.
The nitty-gritty on the build
To get this kind of speed, we use lamps with a high wattage-to-length ratio. By using a high-voltage setup, we can pack a ton of power into a small space. But you can’t just throw these in any box. Because the heat spikes so quickly, the insulation has to be spot on. If the ventilation isn’t handled right, you’re looking at warped panels or the thermal cut-offs tripping constantly. It’s all about balancing that raw power with a chassis that can handle it.
Setting it up and keeping it running
We made these as drop-in replacements. We stuck with standard R7s or SK15 connectors, so you can just wire them up without hunting for weird adapters. The quartz glass is specially treated to handle the humidity of a steam environment, but there’s one catch:keep the glass clean. If grease builds up on the tube, you’ll get hotspots. That’s how you end up with cracked quartz or a burnt-out filament. Just keep the tubes clear, and they’ll last as long as they’re supposed to.
